Still not been able to identify this 100%. @cyndi suspected it was a #pregnantonion . Either way it's flourishing in our bathroom.

I’ll post my updated comment here too - it’s not pregnant onion as that has a fleshy onion like base (which may have a papery tunic around it) - yours is more woody on the surface. It looks very much like a young Ponytail Palm (Beaucarnea recurvata) or at least a Beaucarnea of some sort 👍🏼
@richard.spicer.7906 The base was the one thing thay was making me doubt it being a Pregnant Onion too and after googling Ponytail Palm I would say with 99% certainty that is what we have. Thank you, Richard. On the money yet yet again!
My pleasure - it looks prob a little different from internet pics as it’s possibly still young so the caudex (swollen base) is quite round, but as it grows taller the area below the lowest leaves will gradually turn woody too and you’ll get this more traditional shape of a trunk and swollen base 👍🏼
