@KariSamuel -- Slice 4 limes. Boil 2 mins and plunge into waiting bowl of icewater. Dump out the boiling water, replace with 4 c each water and sugar. Bring to a boil, dissolve sugar completely, turn down to med-low and add the slices, simmering 45-60 mins until rinds are getting transparent. Stir every 15 mins to coat evenly. Dry 24 hrs on a rack or parchment. Syrup left behind can be used for whatever else you like. Slices can be dipt in melted chocolate or more sugar.
