That's a lot of land!! You could certainly grow veg and all sorts. My best advice would be to follow lots more people so you can see their photos to get inspiration. Exciting and agree with Justin about veg, flowering shrubs, acers are lovely with great colours and foliage, some flowering perennials the list goes on! @inverleac
I would start by putting it on paper. Map it out and where the sun travels round the land. Decide where is best for seating areas, best for veg, maybe a small woodland or orchard. Then start nearest to the house with some flower beds that you can see! Best of luck. Feeling envious

I need lots of help! I have almost a blank canvas of 3 acres an a beautiful river. Where do I start? It is so daunting.

I think you should first have a garden seat down by the river where you can sit and plan the garden from there. 😊
