What are the ball things? Anyone know?

I think they are fruits, spent roses form red/purple fruits after flowering if not deadheaded

They are the fruits (rosehips), they will turn red and make a good display after the flowers have finished.

They can be used to make rose hip syrup. Not so popular these days but you used to see it and it was considered a nourishing drink for children as high in vitamin C vitamin D and vitamin A. It's expensive nowadays but you can make your own. It's very sweet!
