@novicegardenlover have you had baked eggplant with Parmesan? Also, tried cutting up some eggplant and add to spaghetti meat sauce 1/2 way thru cooking. I love some extra veggies with bite to my spaghetti sauces.

I haven't, but I added it to lasagna once. Not bad, but the family wasn't so keen. Actually I do like it baked. Some of the traditional ways of cooking them here do not appeal to me.
