Do you know if there are any others in different colours other than green as looking for more ground covering

They are more of a bush. But there are plenty of everygreen plants that spread on a lower level. I used to have a Ceanothus that I used in my last house.

Would it survive under a tree next to spotted laurel? How many would I need to cover around 2m of space

Yes it would but like any plant you have to be patient for growth. I would use 3. Prune as needed.
