There was literally no skill involved Christine, just the one big squash, one onion, pepper and herbs all sweated down then two chicken stock cubes in the added water, simmer for a bit and blitz it. It made four servings for the two of us @vegandmore

Have you ever roasted the seeds as you would pumpkin seeds?? They are delicious and would be a lovely crunch on top of your soup!

I grew quite a few squashes this year and intend to grow even more next year. Although this is going to be a challenge to peel, looking forward to having it as soup for lunch and #bemorelikecharlotte #gyo #kitchengarden 🎃

Yum. I love squash soup. If you cut it up into smallish chunks and roast it you don't need to peel it - just remove the seeds.

I did grow some smaller ones @charlotte which I roast whole and then the peel comes off easily - I did this one the hard way but it has made some delicious soup, it's really warmed us up 😋

I don't normally grow any Charlotte but they've been very good. My friend says you can roast the small ones whole, have you tried that? @charlotte
