I always wondered what these were..i have a neighbor that grows them..haha I thought they were a cucumber gone wrong 😅
@cyndi To reduce bitterness, I soaked the chopped pieces in salted water for at least 15 minutes. Sautéed some garlic cloves and a whole onion with some vegetable oil. Added chopped bell pepper, a whole soyrizo, black bean garlic sauce, garlic hoisin sauce, some water, and veg BBQ sauce.
Added bitter melon, frozen peas, and frozen corn kernels. Covered to give b. melon more time to soften. Served over boiled white rice. Shoveled into eager moufhole. 😛
