This pepper attains a maximum grade of only 4,000 on the Scoville scale and is therefore considered only mildly hot. The single flowers are an off-white (sometimes purplish) color while the stem is densely branched and up to 24ins tall. 'Espelette' chilli peppers are a classic long and narrow tapering shape, bright green when immature, deep red when mature. When dried they turn a dark crimson, similar to that of the cayenne pepper. They have a tough, but thin, skin. The Espelette spice is similar to that of a hot Hungarian paprika, and is sought after in the Basque region, where it is high;y prized. The chillies have a good, fairly mild flavour - mild to medium heat level, up to 4,000 units on the Scoville scale.
