Used the last aubergine to make this aubergine, lemon & garlic purée with omega seed mix (sunflower, sesame & pumpkin seeds) to go with a courgette & spring onion tart. #aubergine

That sounds delicious. Did you roast the aubergine?

@charlotte I grilled til it blackened & softened then puréed it with garlic, lemon juice, extra virgin Olive Oil & parsley.
