@emch , 101 uses!!!! I know how to fry and mash them, us rocky mountain Coloradoan aren't used to fresh crops. . . . 🤔 Can you share your knowledge?!!!! What else can I do with them? 🥰😘😍🤩🤯🤯🤯
Oven fries, sliced and tossed with Mrs. Dash! Baked whole and doused in anything from chili to melted cheese with bacon. Duchesse twirls around your planked whitefish. Add chunx to beef stew. Potato gallette which is thinly sliced taters layered with melted butter in a pie plate and baked into a kind of rustic cake. Mash with carrots and frost a pumpkin- shaped meatloaf. Mash with red food coloring and frost a heart-shaped meatloaf. POTATO SOUP with onions, bouillon and bacon bits.
Mash with turnips for a more buttery flavor. Mash with parsnips for an interesting tang. Glaze with brown sugar, cranberries & cloves and bake. Chop & toss with oil and herbs for a sheet-pan supper. Meat pie! Veggie pie! Shepherd's pie!
Fry up in slices with onion, black pepper and sliced sausage or hotdogs. "Bubble and squeak" made from leftover mashed taters, chopped cooked cabbage and a little pepper fried up into patties. Potato-bean patties coated with parmesan. Hasselbacks with garlic and herbs...
Hash browns. Home fries. Potato chips. Au gratin. Scalloped. Tater tots. Potato pancakes. Twice baked.....

@emch I love your ideas for the meatloaf and also the bubble and squeak. Not sure why it's called that but I want it lol we put 26 uses maybe we can add some more and get to 101!
U can put them in breakfast burritos. Moussaka. U can but them with a spiralizer and fry them. Put them in peirogi. Make gnocchi. Put them around a roast.

I forgot DIY vodka! Bubble and squeak got its name because that's what it does in the frying pan..
My new potato bed is doing great so far! The shade cloth has done well to keep the spring hale off.
